Asus calls their system tuning module "Extreme Tweaker" and is where you will find all of the frequency and voltage controls you are allowed to change.
The BIOS is laid out in 2 basic parts. The main Extreme Tweaker screen is divided into several parts that group common voltage and frequency controls. The rest of the BIOS menus allow you to control some of the advanced features of the motherboard, some of which may not be specific for overclocking.
Below are some of the more interesting screens found in the Rampage III Extreme BIOS.(in no particular order)

As with all BIOS menus it is a good idea to root around for a while and locate all of the settings you are looking for. Given the overall number of options available this can take awhile so stop long enough to make some notes and don't forget to save your profiles.
